Rich and creamy…. and oh so yummy to top your salad with! If you get tired of just your regular oil and vinegar dressing and still want something healthy that you can make from home, look no further. It’s simple and easy to make and won’t have all that extra junk that grocery store dressings have. You can be at peace knowing what ingredients you mixed into your dressing. And if you love avocado, you will love this dressing! Avocados are an excellent source of monounsaturated fats and other nutrients that help the skin and hair glow. Make a double batch of this dressing to have on hand for the week.
** For those of you doing the Elimination Diet Challenge, you can use this recipe during Phase 2! **
1/2 small avocado
1/2 cup water
1 garlic clove
1 TBS raw apple cider vinegar
1/4 teaspoon sea salt
1 small handful fresh parsley
Place all ingredients, except for the parsley, in a blender and blend until smooth and creamy. Add the parsley and blend on low speed until combined.
Yield: about 3/4 cups
Variations that I’ve seen others do is playing with the flavor profiles. Some people love adding lime and cilantro. Some people will add some spice. Whatever your little heart desires, experiment with flavors you like! Share below if you do find something… always love trying new variations!
