BREAKFAST!! Breakfast for lunch… breakfast for dinner! I just LOVE breakfast! So of course, I love all recipes that have to do with breakfast food items! Now that I’m in the reintroduction phase of the elimination diet, I’m finding all sorts of different ways I can have my eggs without having just “eggs”. Of course to make your “diet” more sustainable to you, you have to look for a variety of recipes to keep you from getting bored with eating the same foods day in and day out.
So PANCAKES! Who doesn’t love a good pancake recipe?! And to make it healthy in fact… I’ve been looking into different recipes while taking into account the ingredients as well to make sure I can have it during the reintroduction phase of my challenge. So at this point in my challenge, I was looking for something that was GLUTEN FREE and also DAIRY FREE, since I have yet to reintroduce those foods into my diet again. The search was not that hard! Now that people have been open to following gluten free and dairy free items, there were lots of recipes to try out. I mainly wanted something that was also sugar free as well. All natural sweeteners were ok in my book, such as raw honey!
The recipe I found included coconut flour, coconut milk and coconut oil! Sounds very coconutty doesn’t it?! But no worries! If you’re not a fan of the coconut flavor, it doesn’t taste like coconuts! Coconuts are so good tho and has many benefits you can enjoy! Coconut oil is one of the few foods that’s known as a superfood!
- It’s got medium chain triglycerides (MCTs), which are metabolized differently than other fats. Metabolized quickly by the liver and is a quick source of energy. This in turn can increase fat burning! Heck yea!
- These MCTs can increase how many calories you burn compared to the same amount of calories from longer chain fats.
- This can also reduce your hunger, helping you eat less.
- Lose fat, especially your abs!
- Raises your HDL, which is the good cholesterol in your body!
- Can protect your skin, hair and teeth
- Boosts brain function
SO MANY BENEFITS!! With that being said, here’s the pancake recipe I’ve tried and am definitely keeping!
- 1/4 cup coconut flour
- 1/8 teaspoon baking soda
- Pinch of salt
- 1/3 cup coconut milk
- 2 tablespoons coconut oil
- 3 organic eggs
- 2 tablespoons raw honey
- Pure Maple syrup for toppings
- Banana, Blueberries… other items you wanted to add into the batter (optional)
- Olive Oil or Avocado Oil for cooking
Mix the eggs, coconut oil, and honey together. Add the coconut milk, coconut flour, baking soda and salt. Mix! Heat the pan, I used low to medium heat. At medium heat, my pancakes burned a lot faster so I found the optimal heat at least for my stovetop was low to medium! Also remember too that you aren’t likely to see many bubbles on top as other regular pancake recipes that use regular flour! Don’t burn them like I did at first haha! So make all your pancakes, serve with whatever toppings your heart desires!
I hope you enjoy this pancake recipe as much as I did! It was definitely husband approved! I’ve now inspired my husband to make a few changes in his diet because of all the great results he’s been seeing me get! And I’m hoping to inspire a few more people each and every day!
