Coconut Quinoa Breakfast Porridge

Let’s talk about Quinoa a bit. First off, it’s pronounced “keen-wah”! Lots of people don’t really know much about this power house food. But quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorous, vitamin E and carious beneficial antioxidants. Much more nutritious than rice, so try switching it up a bit and switch it and try this!
IMG_5228This recipe down below is a rich and nutritious way to start your day.
  • 1 1/2 cups uncooked quinoa, rinsed and drained
  • 4 cups water
  • 1 cup coconut milk
  • 1/4 tsp sea salt
  • 1 cup fresh or frozen blueberries
Optional Toppings
  • Pure maple syrup or raw honey
  • Coconut sugar
  • Hemp seeds
  • Chia seeds
  • Cinnamon
  • Fruit of your choice (I like Strawberries or Pineapple)
Place the quinoa, water, coconut milk, and sea salt in a 2-quart pot, cover, and bring to a gentle boil. Reduce the heat to a simmer and cook for about 20 minutes. Stir in the blueberries and cook for 3 to 4 minutes more. Stir and serve hot with optional toppings of your choosing.
Yields: 6 servings

I topped mine with a little bit more coconut milk, cinnamon, chia seeds, strawberries and raw honey!

I’ve literally been eating this every single day since I’ve been in Phase 2 of the Diet! I’m currently on Day 10 so I’ve been eating this every day for over 1 week! I’m not even tired of it. It tastes so good and you can add different toppings every day so you don’t get bored of it! The recipe above will make you enough for the whole week, but it doesn’t take long to make anyways!
