- 1 1/2 cups uncooked quinoa, rinsed and drained
- 4 cups water
- 1 cup coconut milk
- 1/4 tsp sea salt
- 1 cup fresh or frozen blueberries
- Pure maple syrup or raw honey
- Coconut sugar
- Hemp seeds
- Chia seeds
- Fruit of your choice (I like Strawberries or Pineapple)
I’ve literally been eating this every single day since I’ve been in Phase 2 of the Diet! I’m currently on Day 10 so I’ve been eating this every day for over 1 week! I’m not even tired of it. It tastes so good and you can add different toppings every day so you don’t get bored of it! The recipe above will make you enough for the whole week, but it doesn’t take long to make anyways!
