Turkey-Herb-Quinoa Meatballs

Woot woot! I need a good meatball recipe and one that I can be used during the Elimination Phase of the Elimination Diet yay! Packed with healthy protein and great flavors, this recipe is a keeper! Make them in bulk as these meatballs freeze well! Makes meal prepping easy, because the more prepared you are, the more successful you will be! I’m serving these meatballs with the Creamy Broccoli-Mushroom Soup because my husband came up with the awesome idea that this reminds him of an Italian Wedding Soup… so why not! And it does go well with that soup! Other ideas, serve these meatballs over baked spaghetti squash with a side of green salad, on top of zucchini noodles, or just by themselves as a snack!

  • 1 bunch green onions, coarsely chopped
  • 1 handful fresh parsley
  • 1 handful fresh basil
  • 1 to 2 garlic cloves, peeled (optional)
  • 2 cups cooked quinoa
  • 2 pounds ground organic turkey
  • 1 tablespoon Italian seasoning
  • 1 to 2 teaspoon sea salt
  • 1/2 to 1 teaspoon freshly ground pepper
  • Extra-virgin olive oil for cooking

Place the green onions, parsley, basil, and garlic in a food processor fitted with the “s” blade. Process until finely ground. Then add the cooked quinoa and process again. Add turkey, Italian seasoning, sea salt, and pepper; process until all the ingredients are combined. You may need to pulse the mixture a few times and scrape down the sides. Using lightly oiled hands, roll the mixture into equal size meatballs. Set them on plates as you roll them.

Heat a tablespoon or two of extra-virgin olive oil in a large skillet over medium heat. Place enough meatballs in the pan so they still have some room to move. Saute moving the meatballs around a little so they cook on all sides. Cook until browned!

Of course if you’re not doing the Elimination diet, there’s so many things you can add with this such as cheese and unlimited number of sauces. But just remember, this recipe was aimed to be used as part of Phase 2 of the Elimination Diet 🙂
