I “ate” this during the Detox Phase of the Elimination Diet and it was sooooo yummy!! Prep was easy… now remember I’m no chef at all and I get overwhelmed by too many steps. So if I can do it, ANYONE CAN! Simple to make and easy to digest. Try adding other vegetables, such as zucchini, garlic, parsnips, kale or spinach. Add extra stock if you add extra vegetables. Of course play around with your flavors that you like. This recipe was put together with the detox phase in mind!
- 1 to 2 tablespoons extra-virgin olive oil
- 1 large leek, chopped
- 1 1/2 pounds broccoli, chopped
- 8 ounces cremini mushrooms, chopped
- 6 cups chicken stock or vegetable-seaweed stock
- 2 teaspoons dried thyme
- 1 tablespoon fresh oregano leaves
- 1 handful fresh parsley
- 1 handful fresh basil
- Sea salt and freshly ground black pepper to taste
Heat the oil in a 6-quart pot over medium heat. Add the leak and saute for about 5 minutes, or until softened. Then add the broccoli, mushrooms, stock and thyme. Cover and simmer for about 20 minutes, or until the vegetables are tender.
Turn off the heat and add the fresh herbs. Use an immersion blender to puree the soup in the pot, or carefully transfer the soup to a blender and puree in batches. Season with salt and pepper to taste. Serve. Freeze soup in wide-mouthed quart or pint jars, if desired.
Yield: about 6 servings

After eating this and looking at the recipes I can use for Phase 2 of the Elimination Diet, I knew I wanted to make some turkey meatballs and pair it with this soup. It’s going to be so yummy together! Soup is easy for anytime and since you can freeze it, you can heat it up whenever you like. It’s nourishing and comforting all at the same time!
